“I’m a fan of the Ayala house style, a model of delicacy and elegance. This bottling of the Brut Majeur, disgorged in July of 2012 (a blend of pinot noir, chardonnay and pinot meunier) is open and fragrant, highly mineral, with light notes of white chocolate, brioche, acacia blossoms and honey. The palate is deceptively powerful, delivering significant depth and complexity on a light and tight frame. Excellent length supported by riveting acids. This is the type of champagne that should continue to evolve slowly and favourably in the cellar, but it’s certainly delicious now. A fine value. Tasted January 2013. Value Rating: ***”
