Why We Love It:
It is a remarkable challenge to find superlatives and lavish introduction to this remarkable Champagne that haven’t already been shared by others. For more than 100 years, Bollinger has gone well beyond the expectations, requirements and competition to craft a singular Champagne so exceptional that it has come to symbolize more than just a wine – but rather an entire lifestyle experience.
The perfect choice to celebrate and embrace the most profound occasions, this is the Champagne you want to have at your fingertips as the holiday season approaches. In a year of ups and downs (not to mention a few sideways detours!), it is hard to say what the months ahead will look like. So whether planning to gather with many or just a few, looking to toast the end of a challenging year, or the arrival of something new and exciting – you owe it to yourself to have a bottle or two of Bollinger Special Cuvee there as part of the journey.

Recipes & Food Pairings:
Much like it’s reputation and style, this is a Champagne that calls out for all things luxurious and decadent. Sure – it’s perfectly outstanding as a sip before dinner all on its own, but there are many great pairings that can make your Bollinger moment even more memorable. Here are a few of our favourite food pairing ideas:

Tasting Notes:
“Disgorged in the second half of 2019, the latest release of Bollinger’s NV Brut Special Cuvée is based on the 2015 vintage, complemented by around 60% reserve wines. The wine is still quite tightly wound after its recent disgorgement, opening in the glass with notes of crisp yellow orchard fruit, freshly baked bread, clear honey and orange peel, with little sign of the nuttiness to come with bottle age. On the palate, it’s medium to full-bodied, muscular and incipiently textural, with a deep core, ripe acids and a pinpoint mousse. This isn’t the most incisive vintage of Special Cuvée, but it’s powerful and vinous and will have fine gastronomic potential with a little bottle age. Drink date: 2022-2035.”
