Ayala is one of the most exciting and dynamic stories in the world of Champagne today. Owned and backed by a global Champagne icon (Champagne Bollinger), operated and run by a talented and young team of professionals, headed up by a celebrated and recognized female Winemaker in Carolyn Latrive, access to the finest grapes grown in the top vineyards across Champagne and produced entirely in-house using the finest methods available, the Chardonnay-based Champagnes are becoming as sought-after as any sparkling wines made anywhere.

Produced from 80% Chardonnay and 20% Pinot Noir, all of the grapes for this wine come from Grand Cru vineyard sites. This Champagne was aged for 9 years on its lees before disgorgement and release to market. The 2006 vintage was a challenging, but ultimately very successful growing season in Champagne. A wet spring was followed by a steady and hot summer, and long cool fall. The result was a perfect balance between acidity, sugar and aromatic ripeness in the resulting grapes.
