[ The Story ]

The story of Ayala begins with its inception by Edmond de Ayala, more than 150 years ago. Today this historic producer is owned by Champagne Bollinger – one of the great noble family wine companies of the world. Champagne Ayala has always been a small, independent and family-run business. After the Second World War the House went through a rather quiet period as its leaders occupied important positions within the industry and Champagne trade associations. Its purchase by Bollinger in 2005 was the beginning of a marked renaissance for Champagne Ayala, highlighted by complete restoration of the winemaking facilities and the arrival of a new staff. Today, the House only employs about 15 people, keeping true to the spirit of its origin as a small artisan family producer.

[ The Wine ]

This delicate and sophisticated Rose Champagne from Ayala is comprised of 50% Chardonnay creating a wine defined by its elegance and finesse. The addition of 10% still (not sparkling) Pinot Noir – from the top crus of the Montagne de Reims – adds more than just colour to this Rose; imparting complexity, body and depth of flavour, all of which make it a perfect companion for fine spring and summer fare. Every step in the winemaking process is carried out by Ayala in its own facilities, from vinification to ageing, riddling, disgorgement, labeling and conditioning. Carved deep into the chalk-laden soils of Champagne, the cellars of Ayala span some 2 kilometres through caves which are home to almost 2.5 million bottles. Here the wines slumber quietly, slowly maturing in these centuries-old cellars beneath the village of Ay.

“Bright orange-pink. Fresh strawberry and tangerine on the lively floral nose and in the mouth. Spicy and incisive, with sappy red fruit and rose pastille flavors underscored by juicy acidity and a subtle chalky nuance. A mineral element adds bite to the finish, which hangs on with strong tenacity and repeating floral character. Six percent of the Pinot Noir component in this blend is in the form of still Pinot Noir from vineyards in the Montagne de Reims.”
