FRIDAY OCTOBER 7th, 2016

There are a whole bunch of ways – both formal and informal – marking the end of summer and arrival of autumn. For me, none is more definitive (or welcome!) than the delicious harvest celebration we enjoy with family and friends over the Thanksgiving weekend. It’s with this in mind that we present a delicious line-up of perfect fall wines you might want to consider serving – from a delicious barrel aged California Chardonnay to a fabulous value Pinot Noir from Burgundy, along with a couple of extraordinary treasures from Champagne and Spain…

CHAMPAGNE BOLLINGER 2002 R.D. – CHAMPAGNE, FRANCE

The 2002 vintage of Bollinger R.D. is particularly sought-after and collectible, both for it’s remarkable quality as well as for the fact that it marks the 50th anniversary of the creation of this now iconic Champagne. In 1967, many customers and distributors had begun encouraging Madame Bollinger to produce a “reserve” wine as an addition to the celebrated and successful non-vintage “Special Cuvee”. As was so often the case throughout her career at the helm of this family Champagne business, Madame Bollinger boldly embraced this challenge in a way that would shape the future of her family firm – and the Champagne trade as a whole..

RECOMMENDED PAIRINGS:
Truffle + Champagne Risotto w/ Lobster + Scallops
Pappardelle w/ Mushrooms, Ricotta & Walnuts
Comte Cheese Souffle

TECHNICAL SPECS:
Producer: Champagne Bollinger
Wine: R.D.
Vintage: 2002
Region: Champagne, France
Bottle Size: 750mL
Cases: 3 x 750mL
Price: $282 per 750mL

TASTING NOTE:
“Super fresh, this is striking given the 10 years in the cellars; it has a fine citrus nose – plenty of lemon, grapefruit, yellow chalky notes, some lighter floral elements too. The palate is super dry (dosage at 3-4g) and there’s a silky, sherbet-like texture, smooth, fine and long. The citrus flavours give way to the driving surging acidity, thunderous acidity, really driving and powerful. The finish twists very slowly through to light-toasted cashew fruit flavours, but lemon citrus prevails. This is thrilling Champagne.” – 99 out of 100 (JamesSuckling.com)

CHANSON RESERVE DU BASTION BOURGOGNE PINOT NOIR – BURGUNDY, FRANCE

Chanson Reserve du Bastion Pinot Noir is produced from 100% Cote d’Or grapes, and the result is a wine delivering elegance and refinement beyond the humble pedigree of its “Bourgogne” designation. These vineyard sites are home to the classic Burgundian clay/limestone soil profile offering well-drained soils producing wines of superior concentration and complexity. Another advantage to the elevated pedigree of the fruit used to make this wine is that vineyard practices, crop yields and harvest handling reflect the high standards employed at Chanson in the production of more expensive Grand Cru, 1er Cru and Villages bottlings.

RECOMMENDED PAIRINGS:
Oven-Baked Salmon w/ Lemon & Herbs
Chicken Thigh, Sweet Potato & Parsnip Skillet
Prosciutto-Wrapped Beef Tenderloin Stuffed w/ Parmigiano-Reggiano

“Elegant, with sour cherry, mineral and spice. Unlike many wines at this price point, it’s comprised entirely of fruit from the Côte d’Or. Food-friendly, it’s perfect with grilled eggplant with veal cutlets, rotisserie chicken or rack of lamb.” – (LCBO Vintages Tasting Panel)

EMILIO LUSTAU PATA DE GALLINA OLOROSO SHERRY – JEREZ, SPAIN

Lustau is the platinum standard in the production of fine dry Sherries. This is a reference point for what dry Oloroso Sherry is supposed to taste like – rich aged flavours and aromas of hazelnut, brown butter, caramelized apple, raisin, wood smoke and more. Pata de Gallina means “hen’s foot” in English, in reference to the customary chalk marks drawn on the outside of chosen barrels. An intellectual drink made for thoughtful drinkers; you can sip on this as an aperitif or digestif – or better yet, serve it at the table with food. Lustau Oloroso is an traditional match to serve alongside Spanish-inspired small plates, pintxos or tapas. It’s also a profoundly delicious choice with braised meats, charcuterie or flavourful cheeses. If you fancy yourself a wine lover, dry Sherry is simply an experience you can’t afford to exclude from your regular go-to drink picks.

RECOMMENDED PAIRINGS:
Caramelized Onion, Portobello & Old Cheddar Grilled Cheese
Chicken Liver Mousse w/ Candied Bacon
Grilled Ribeye w/ Soy-Butter Sauce

TECHNICAL SPECS:
Producer: Emilio Lustau
Wine: Dry Oloroso Sherry “Pata de Gallina”
Vintage: n/v
Region: Jerez, Spain
Bottle Size: 500mL
Cases: 12 x 500mL
Price: $39.00 per 500mL

TASTING NOTE:
“Beautifully rounded and oily, with just a hint of sweetness. Quite fruity, both fresh berry fruits and dried figs. Very smooth, with a nice acidity of raspberry juice and lemon peel. Not at all tangy or austere, but it’s quite powerful with a bit of alcohol coming out. Dry and very long finish.” – (SherryNotes.com)
